Fully Automatic Production Line Castella cake Nagasaki cake Whole Pan Sliced Cake Making Equipment

 

The whole pan cake  is one kind of sponge cake, also called as castella cake or nagasaki Cake. which is famous its light and freshing taste.

The  castella cake is baked in the wooden farme pan,the mixed batter are deposited into pan and enter into tunnel oven, after baking, the cake are depanned from pan and take the paper off and turned over again .after cooled, the whole pan cake is cut by ultrasonic slicer and  transported to packaging machine.

Producing perfectly castella cake relies on the accurate depositors and gentle sponge handling, combined with optimized automation to increase throughput, and minimize waste.

Continuous aeration mixer

Aeration is critical to cakes. Developed in the mixer, air bubbles in the batter provide much of the cake’s structure and volume. Aeration impacts a cake’s ability to rise in the pan.

DEPOSITOR

1. Electrically controlled by PLC for semi-liquid fillings.

2 .This depositors include nozzles which is changeable in the width mounted on a bridge.

3. Standard range of volume is adjustable on the screen from 15 to 130 cc.

4. The capacity is adjustable up to 20-25strokes p/min. depending on the used materials and volume.

5. The operation in full synchronisation to the empty tray conveyor when the detector gets the tray arrival information.

6. The total depositor is built onto a fixed frame which is made of stainless steel and non corrosive materials.

7. The motor and reducer is mounted in the cabinet which is stand beside of the conveyor.

8 .The PLC with the touch screen is mounted on the top of the cabinet for easy operates.

TUNNEL OVEN:

1: The oven is constructed gas-tight baking tunnel, divided into 2m/ section. Each section is connected on a frame, with a gas-tight connection between the sections.

2: the baking tunnel are insulated with 20CM-25CM layer of high-quality insulation material, in order to reduce heat loss to a minimum.

4.Stainless steel side and top outside panel.

5.The temperature is measured in each zone, both temperature underneath and above the product to be baked. PT-100 sensors are fitted in the baking tunnel for this purpose. The measured values for each zone can be read both on the central control panel (touch panel) and moisture instrument.

6.In the event of a driving motor failure, the belt can be driven by the hand device. Which could send the product out of the oven.

7. OMRON PLC system is built into the control cabinet for the control of the oven.

Flip over Depanner

1.Support structure in A3 plate on floor-standing height adjustable legs.

2 .Independent electric and control panel.

3. The overturning depanning plate take the tray over turn two times,then put the tray back on the return conveyor, and the cakes are caught by overturning PU belt. The belt is high- temperature resistance PU belt with white color.

Conveyors

1. PLC systems can monitor faults and showing alarm information in Mandarin and English according to the customer’s requirement. It has an open communication interface for the internet and is free to connect with other controlled systems and computer systems.

Ultrasonic sIicer 

Ultrsonic slicer provide with a knife to cut the products at length, the no. of strokes is adjustable up to 55 strokes per minutes; maximum cutting height 60mm; cutting length adjustable by means of servo motor.
